The bakery brings even more life to the growing neighborhood near MetroHealth.

CLEVELAND — It took Caitlin Dobson six years to achieve her goal, but last week she finally unveiled her eye-catching bakery and cafe in the Clark-Fulton neighborhood. What started as a home-based craft business selling to area cafes and restaurants has blossomed into a regional wholesale business with products landing on the shelves of Whole Foods and Nature’s Oasis. Now baking lovers can pick up Dobson’s vegan, gluten-free and classic desserts, as well as freshly brewed Rising Star coffee, at the retail cafe.

“From the start, Floressa was going to be a bakery and a cafe,” says Dobson. “We finally got here after six years.”

Dobson bought the building in 2018, literally saving it from the wrecking ball. After extensive renovations, the building now houses a production kitchen and cafe. The pastry chef’s specialty is making hypoallergenic vegan and gluten-free sweets, but she also offers classic dishes using eggs, flour, butter, milk and cream.

“We wanted to create a place where everyone could come and enjoy something with a loved one or friend and not feel left out,” Dobson says of the product line. “But we also wanted to create an opportunity for people to try things they might not have.”

For now, Floressa is sticking to takeout items like cookies, brownies, banana bread, pumpkin bread, chocolate chip cookies, cinnamon rolls and lemon bars. But over time, coffee will develop into savory breakfast and lunch dishes like soups, sandwiches, and quiches.

Dobson says she chose Clark-Fulton as the home of the beloved bakery for a number of reasons.

“There’s a great culture here, the people are great and I live in the neighborhood,” she explains. “It felt like a place that was growing but also wanted to stay true to its roots. people are very invested in their community.
