Laughing Man Coffee, a coffee brand founded by actor Hugh Jackman, has opened Laughing V Cafe in New York’s exclusive Tribeca neighborhood, the company’s first vegan business venture.

Run by chef Lauren Evans, the cafe is the result of Evans’ local campaign for more plant-based food options in the ultra-trendy neighborhood, reports VegNews. The chef’s consistent efforts brought her to the popular Laughing Man cafe on Duane Street. Co-founders David and Barry Steingard took an interest in Evans’ plant-based requests, and when they asked for food suggestions, she presented them with a fully curated menu of vegan entrees, pastries and appetizers. luxury.

The Steingards were so impressed with Evan’s menu ideas that they decided to open a separate vegan cafe next door to Laughing Man, with Evans as their new chef.

Fresh sandwiches and more

Offering a streamlined selection of sandwiches and pastries, Laughing V offers house-made Mac ‘N Cheese, Philly Cheesesteaks, Tofu Caprese Sandwiches, and Portobello Mushroom Wraps. Its specialty desserts include freshly baked palms, whole wheat focaccia and Strawberry Matcha Linzer cookies. According to Evans, all items are handmade without any artificial or processed ingredients.

Laughing V customers can also shop at a small market for snacks and select goods, such as gourmet pasta, hot corn, creamy dairy-free sauces and vegan pâté.

Evans, who proclaims she’s vegan for animals, reveals that her quirky and more complex menu suggestions may yet appear in future pop-ups, and that Laughing V is currently working on new items with “much more exciting dishes to come”. The little cafe has already attracted a large and enthusiastic following, and Evans says it’s only just beginning to make Tribeca a much more vegan area. “I care about animals,” Evans said. “That’s what drives me.”
