New European-style cafe and bakery


Pave NYC is a European style cafe/bakery from Chief Jonghun Won (Jungsik, La Tabatière) and Jin Ahn (noreetuh, Jungsik, per se).

Chief Won attended the Culinary Institute Of America, graduated at the top of his class in 2005 with a diploma in baking and pastry and became the Opening Executive Pastry Chef at Jungsik Seoul and Jungsik New York where he met his future business partner Jin Ahn.

Realizing that baking was his true passion, Chef Won left Jungsik in 2014 to take up an entry-level position at Balthazar as an assistant baker and shaper to immerse themselves in the forgotten art of baking bread.

In 2015, he opened his first bakery, The Snuffbox in Closter, New Jersey highly acclaimed, and it has since been noted as one of the best bakeries in northern New Jersey.

Pavé represents Chef Won’s return to the New York culinary scene and will feature pastries, sandwiches and fresh bread baked all day including chopsticks, multigrain, leavenand ciabatta bread with olives with the help of a Bongard Paneotrad at the cutting edge of technology dough divider, the first in the United States.

Pavé’s goal is to revive the art of baking fresh bread all day long through timeless artisanal simplicity.

Chef Won and his team meticulously prepare fresh bread with small baguette or wholemeal bread for purchase, as well as sandwiches, reminiscent of those found in small Parisian stalls.

Chef Won believes the best sandwich starts with fresh bread, filled with Easy, sustainableand organic ingredients.

He and Jin enlisted Executive Chief Peter Hong (Gramercy Tavern, New York Palace Hotel) to create their menu, which will include French classics As Ham butter, a slice of baguette with a slice of butter and Dijon mustard, stuffed with French ham; a Croque-monsieur, ham béchamel and Dijon mustard on sourdough bread with freshly melted Gruyère on top; and its sandwich version of a Caprese salad Caprese VegetarianItalian tomatoes, mozzarella and basil pesto on soft ciabatta bread with olives.

Like Chef Won’s breads, the signature pastry line of Green tea scones with white chocolate; Brioche stuffed with passion fruit; and Marbled pound cake, made with bananas, eggs and chocolate swirls; among other things, are cooked on site daily.

Pavé NYC offers specialty coffee drinks from Culture Café counterwho shares a similar philosophy regarding the sustainability of products and people.

Other drinks include high quality loose leaf teas and non-alcoholic beverages.

The interior has a rustic, comforting feel with beautiful murals adorning the walls throughout the space and hexagonal mosaic flooring, creating a bucolic vibe in Midtown Manhattan.

The counter begins with a display case at the front of the restaurant that turns into a café-bar opposite an open kitchen, leading to a seating area with archways, columns and exposed brick walls.

Pavé NYC comes alive with greenery and a skylight that invite you to slow down a bit and enjoy the simplicity of life, one sandwich at a time.
